Ingredients

Scale
  • 1/2 cup unsalted butter (113g), at room temperature
  • 2 tablespoons white sugar
  • 3 tablespoons confectioners' sugar
  • 1/4 teaspoon vanilla extract (optional)
  • 1/4 teaspoon almond extract (optional)
  • 1 1/3 cups all-purpose flour
  • 1/8 teaspoon salt
  • 1/3 cup raspberry preserves

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream the room-temperature butter with white sugar and confectioners' sugar until light and fluffy (about 2-3 minutes).
  3. Add vanilla and almond extracts, along with salt; mix until just combined.
  4. Gradually sift in the flour while mixing on low speed until fully incorporated; avoid overmixing.
  5. Scoop out portions of dough (about one tablespoon each) onto prepared baking sheets, leaving space between them.
  6. Press down slightly in the center of each mound and add about half a teaspoon of raspberry preserves.
  7. Bake for 12-15 minutes until edges are golden but centers remain soft. Cool on baking sheets for five minutes before transferring to wire racks.
