  • 3 egg yolks
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 11 tbsp unsalted butter (room temperature)
  • 3.5 ounces full-fat cream cheese (room temperature)
  • 1 cup granulated sugar (for cookies)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar (for rolling)

Instructions

  1. In a small pot over medium-low heat, combine 1/2 cup granulated sugar, egg yolks, lemon juice, and lemon zest. Stir constantly until thickened (about 12 minutes). Remove from heat and mix in 4 tbsp butter until melted. Let cool.
  2. In a large bowl, cream together the remaining butter and cream cheese until smooth. Add in the remaining cup of sugar and mix until fluffy.
  3. Beat in the whole egg, egg yolk, and vanilla extract until combined.
  4. Gradually fold in flour, baking powder, and salt until just mixed.
  5. Scoop dough into balls and roll in powdered sugar before placing on parchment-lined trays.
  6. Create wells in the centers using the bottom of a tablespoon.
  7. Freeze for 1-2 hours before baking at 350°F for about 12-13 minutes.
