  • 2/3 cup granulated sugar (divided)
  • 7 tablespoons potato starch
  • 2 1/2 cups whole milk
  • 200 grams unsalted butter (room temperature)
  • 3/4 cup all-purpose flour
  • 3 large eggs
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the cream filling by heating milk in a saucepan. In a bowl, mix egg yolks, sugar, potato starch, and salt until smooth. Gradually whisk in hot milk, then return to heat, stirring until thickened.
