Ingredients

  • 1 cup oat flour
  • ½ cup vanilla protein powder
  • ¼ cup coconut sugar
  • ¼ cup coconut oil (melted)
  • ¼ cup oat milk (or any milk of choice)
  • ½ cup cashew butter
  • 3 tablespoons maple syrup
  • 2 cups dark chocolate chips (at least 70% cocoa)

Instructions

  1. Line an 8"x8" baking pan with parchment paper. In a large bowl, mix oat flour, vanilla protein powder, coconut sugar, melted coconut oil, and oat milk until smooth.
  2. Press the cookie mixture into the prepared pan evenly and chill in the freezer for about 10 minutes.
  3. In another bowl, whisk together cashew butter, maple syrup, melted coconut oil, and vanilla extract until smooth. Pour over the chilled cookie layer and spread evenly.
  4. Freeze for at least 30 minutes until firm.
  5. Melt dark chocolate chips with a tablespoon of coconut oil using a double boiler or microwave.
  6. Cut the bars into pieces and dip each piece into melted chocolate. Place back on parchment paper to set.
