  • 1/3 cup butterscotch chips, melted and slightly cooled
  • 1/2 cup buttermilk, at room temperature
  • 1 cup unsalted butter, softened (for frosting)
  • Pinch of salt (for frosting)
  • 2/3 cup butterscotch chips, melted and slightly cooled (for frosting)
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla bean paste or extract (for frosting)
  • 1/2 tsp butter extract (for frosting)
  • Gold and white nonpareil sprinkles (optional)
  • 1/4 cup butterscotch chips (for drizzle)
  • 1 1/2 tbsp heavy cream
  • 1/2 tbsp honey

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large bowl, cream together unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla bean paste and butter extract.
  4. Gradually add melted butterscotch chips to the mixture.
  5. Alternate adding the dry ingredients with buttermilk, stirring until just combined.
  6. Divide the batter evenly between the prepared pans. Bake for 25-29 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool before frosting with butterscotch buttercream and drizzling with butterscotch sauce.
