  • 2 large sweet onions
  • 1 cup all-purpose flour (or gluten-free blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup buttermilk (or milk with vinegar/lemon juice)
  • 2 cups panko breadcrumbs
  • 4 cups vegetable oil (for frying)

Instructions

  1. Peel and slice the onions into thick rings (about ½ inch wide).
  2. In one bowl, whisk together the flour, garlic powder, paprika, salt, and black pepper.
  3. Pour buttermilk into another bowl. Dip each onion ring in buttermilk, then dredge in the flour mixture.
  4. Dip rings back in buttermilk followed by coating in panko breadcrumbs.
  5. Heat vegetable oil to 350°F (175°C) in a deep fryer or heavy pot. Fry the onion rings in batches until golden brown (about 3–4 minutes per side).
  6. Remove the chips with a slotted spoon and drain on paper towels.
