  • 3/4 cup (161g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/3 cups (160g) all-purpose flour
  • 1/4 cup (21g) unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup drained & finely chopped maraschino cherries (plus extra for garnish)
  • 3/4 cup (129g) semi-sweet chocolate chips (plus extra for garnish)

Instructions

  1. Preheat your oven to 350ºF (175ºC).
  2. In a mixing bowl, cream together room temperature unsalted butter and brown sugar until smooth.
  3. Beat in one egg and vanilla extract until fully combined.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
  6. Gently fold in the chopped maraschino cherries and chocolate chips.
  7. Drop tablespoon-sized portions of dough onto a lined baking sheet.
  8. Bake for 13-15 minutes until edges are set but centers remain slightly soft.
  9. Allow cookies to cool on the baking sheet for 15 minutes before transferring to a wire rack.
