Ingredients

Scale
  • 2.5 kg fresh apricots
  • 1/4 cup water
  • 1/4 cup freshly squeezed lemon juice
  • 1.8 kg granulated sugar

Instructions

  1. Wash apricots under cool water, halve them, and remove pits.
  2. Chop apricots into smaller pieces for quicker cooking.
  3. In a large pot over medium heat, combine chopped apricots and water; simmer for about 15-20 minutes until softened.
  4. Stir in granulated sugar and lemon juice; cook on medium-high heat until boiling vigorously for 10-15 minutes.
  5. Perform the gel test using a chilled plate; if it holds its shape when tested, it’s ready.
  6. Pour hot jam into sterilized glass jars and seal tightly; let cool at room temperature before storing.
