  • 1¼ cups pastry flour

  • ¼ cup shortening
  • 1 teaspoon vanilla bean paste
  • ½ teaspoon rosewater
  • 1½ cups powdered sugar
  • 2 tablespoons dried rose petals (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together oat or almond milk, olive oil, and vanilla bean paste until smooth.
  3. In another bowl, sift together pastry flour, salt, cardamom, baking powder, and baking soda.
  4. Cream together vegan butter, shortening, and sugar until light and fluffy.
  5. Gradually mix in the wet ingredients into the dry mixture until just combined.
  6. Fill cupcake liners two-thirds full with batter and bake for about 22 minutes or until a toothpick comes out clean.
  7. Cool completely before frosting with a mixture of vegan butter, powdered sugar, vanilla bean paste, and rosewater.
