  • 6 medium Granny Smith apples
  • ½ tablespoon lemon juice
  • ½ cup white sugar
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • 3 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 2 tablespoons melted vegan butter
  • 2 teaspoons oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel, core, and slice the Granny Smith apples into thin half-moon shapes. Toss them with lemon juice to prevent browning.
  3. In a mixing bowl, combine white sugar, brown sugar, cinnamon, nutmeg, ginger, and flour. Mix well.
  4. Coat the apple slices with the sugar and spice mixture, followed by melted vegan butter and vanilla extract.
  5. Roll out one half of the pie dough into a circle and fit it into a 9-inch pie pan.
  6. Fill the crust with the apple mixture, spreading it evenly.
  7. Roll out the second half of the dough and place it over the filling. Crimp edges to seal and cut slits for ventilation.
  8. Bake for about 30 minutes covered with foil. Then remove foil and bake for an additional 15-20 minutes or until golden brown.
  9. Allow to cool for at least 30 minutes before slicing.
