  • 1 tbsp peanut or coconut oil
  • 1 1/2 lb boneless skinless chicken breasts (cut into quarters)
  • 1 tsp salt
  • 1 onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp fresh ginger (minced)
  • 1 can California cling peach slices
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 1 tbsp Thai chili sauce
  • Juice of one lime
  • 1 tsp dried lemongrass
  • 1 tbsp cornstarch
  • 1 red bell pepper (thinly sliced)
  • 1/4 cup chopped peanuts (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. Heat oil in a large skillet over medium-high heat. Season chicken with salt and sear until golden brown on both sides, about 3 minutes per side.
  2. Transfer chicken to a plate. In the same skillet, reduce heat to medium-low and add onions, garlic, and ginger. Sauté until softened.
  3. Whisk together peach juice, honey, soy sauce, fish sauce, rice vinegar, chili sauce, lime juice, and lemongrass in a bowl. Add cornstarch and whisk until smooth.
  4. Return chicken to the skillet along with red bell pepper and peach slices. Pour sauce over everything and stir gently to coat.
  5. Simmer for about five minutes until heated through. Garnish with chopped peanuts and cilantro before serving.
