Ingredients

Scale
  • 1 cup plain yogurt
  • 3 cloves garlic
  • 1 inch fresh ginger
  • 2 tablespoons lemon juice
  • 1 teaspoon hot paprika
  • 1 teaspoon cumin
  • 1 tablespoon garam masala
  • 1 pound boneless skinless chicken thighs
  • 1 cup mango (diced)
  • 1 cup mozzarella cheese
  • 4 pieces naan bread
  • 1 medium red onion (sliced)
  • Fresh mint and cilantro (for garnish)

Instructions

  1. Marinate the chicken: In a large mixing bowl, combine yogurt, minced garlic, grated ginger, lemon juice, paprika, cumin, garam masala, salt, and pepper. Add chicken thighs and coat well. Cover and refrigerate for at least 30 minutes or up to overnight.
  2. Cook the chicken: Heat oil in a skillet over medium-high heat. Add marinated chicken in batches to avoid overcrowding. Sear for 5–7 minutes per side until golden brown and cooked through. Remove from heat and let rest.
  3. Prep toppings: Soak sliced red onion in cold water for about 10 minutes to mellow their flavor. Dice mango and chop fresh herbs.
  4. Assemble pizzas: Preheat oven to 450°F (232°C). Spread mozzarella cheese over naan bread followed by grilled chicken pieces and diced mango. Top with sliced onions.
  5. Bake: Place assembled naan pizzas on a baking sheet and bake for approximately 10–12 minutes until cheese is bubbly and edges are golden.
  6. Garnish: Sprinkle chopped mint and cilantro over the top before serving.
