4 salmon fillets
1 tsp oil (vegetable or olive)
1 tsp black pepper
1 tsp dark soy sauce (or tamari)
1 tsp onion powder
315 g sweet chilli sauce
1 tbsp diced garlic
1 tbsp ginger
Juice of half a lime
Fresh coriander (to taste)
Instructions
Season the salmon fillets with oil, black pepper, dark soy sauce, and onion powder on a large plate.
Heat oil in a non-stick pan over medium-high heat until shimmering. Add the salmon fillets skin-side down and cook undisturbed for about 2 minutes on each side until golden brown.
Remove the salmon from the pan and set aside. In the same pan, add garlic and ginger; sauté for 30 seconds until fragrant.
Stir in sweet chilli sauce, chopped coriander, and lime juice; let simmer for 2-3 minutes until slightly thickened.
Return the salmon to the pan, coating it with the sauce for an additional minute before serving.
