  • 8 oz baby bella mushrooms
  • 2 tbsp avocado oil
  • 4 cloves garlic
  • 1 tsp fresh thyme (or 1/4 tsp dried thyme)
  • 1/2 tsp salt
  • 8 oz softened cream cheese
  • 1/2 cup full-fat Greek yogurt
  • 1 cup shredded Parmesan cheese (divided)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a cast iron skillet, heat avocado oil over medium-low heat. Add minced garlic and thyme; sauté for about three minutes until fragrant.
  3. Add diced mushrooms to the skillet; sauté for seven minutes until tender. Remove from heat to cool slightly.
  4. In a mixing bowl, combine softened cream cheese, Greek yogurt, and half of the Parmesan cheese; blend until smooth.
  5. Fold in sautéed mushrooms and their juices until evenly mixed. Top with remaining Parmesan.
  6. Bake in the preheated oven for 15 minutes, then switch to broil for an additional five minutes until golden brown.
  7. Allow to cool for five minutes before serving with toasted baguette slices or veggies.
