  • 1 cup fresh spinach leaves, chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, sliced
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a saucepan over medium heat, warm 1 tablespoon of olive oil and sauté minced garlic until fragrant (about 1 minute).
  4. Add chopped spinach to the pan and cook until wilted (2-3 minutes). Season with salt and pepper.
