Instructions

  1. Preheat oven to 350°F (175°C) and grease mini loaf pans or one large loaf pan.
  2. In a mixing bowl, combine diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract until smooth.
  3. In another bowl, whisk together all-purpose flour, baking soda, and salt.
  4. Gradually add dry ingredients to the wet mixture and fold gently until just combined.
  5. Pour batter into prepared pans, filling them about three-quarters full.
  6. Bake mini loaves for 25-30 minutes or a large loaf for 50-55 minutes until golden brown and a toothpick inserted comes out clean.
  7. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
