  • 1 ½ pounds baby gold or baby red potatoes (quartered)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (melted)
  • 2 teaspoons Cajun seasoning
  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons honey
  • 1 teaspoon minced garlic

Instructions

  1. Preheat oven to 425°F.
  2. In a mixing bowl, toss quartered potatoes with olive oil, one tablespoon melted butter, and two teaspoons Cajun seasoning until well-coated.
  3. Spread seasoned potatoes evenly on one side of a greased sheet pan.
  4. Roast potatoes for about 15 minutes, stirring halfway through.
  5. In another bowl, mix shrimp with two tablespoons melted butter, one teaspoon Cajun seasoning, honey, and minced garlic.
  6. Once the potatoes are golden, add shrimp on top of them in the sheet pan.
  7. Roast for an additional 10-12 minutes until shrimp are pink and opaque.
  8. Serve hot, optionally garnished with fresh herbs.
