- 1 ½ pounds baby gold or baby red potatoes (quartered)
- 1 tablespoon olive oil
- 2 tablespoons butter (melted)
- 2 teaspoons Cajun seasoning
- 1 pound large shrimp (peeled and deveined)
- 2 tablespoons honey
- 1 teaspoon minced garlic
- Preheat oven to 425°F.
- In a mixing bowl, toss quartered potatoes with olive oil, one tablespoon melted butter, and two teaspoons Cajun seasoning until well-coated.
- Spread seasoned potatoes evenly on one side of a greased sheet pan.
- Roast potatoes for about 15 minutes, stirring halfway through.
- In another bowl, mix shrimp with two tablespoons melted butter, one teaspoon Cajun seasoning, honey, and minced garlic.
- Once the potatoes are golden, add shrimp on top of them in the sheet pan.
- Roast for an additional 10-12 minutes until shrimp are pink and opaque.
- Serve hot, optionally garnished with fresh herbs.
