  • 1 lb scallops (fresh or thawed)
  • 12 oz pasta (short shape like busiati)
  • 12 large shrimp (peeled and deveined)
  • 3 cloves garlic (minced)
  • 3 oz butter (salted)
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup dry white grape juice
  • 1 Tbsp fresh Italian parsley (chopped)
  • Kosher salt and black pepper (to taste)

Instructions

  1. Brine the scallops by dissolving 1 Tbsp Kosher salt in 16 oz water. Soak the scallops for about 10 minutes, then dry them thoroughly.
  2. Boil well-salted water in a large pot, add the pasta, and cook according to package instructions until al dente. Reserve some pasta water before draining.
  3. In a large cast iron pan over high heat, add olive oil. Once shimmering, add dried scallops and sear each side for approximately 1½ minutes until golden brown.
  4. Introduce shrimp, minced garlic, and parsley to the pan; cook for an additional two minutes while stirring gently.
  5. Deglaze with dry white grape juice while scraping the pan to incorporate all flavors.
  6. Lower heat slightly; add butter and stir until melted into a rich sauce.
  7. Combine the cooked pasta with the seafood mixture; if necessary, add reserved pasta water until reaching desired consistency.
  8. Serve immediately with lemon wedges for added brightness.
