  • 1 1/2 cups peach preserves
  • 1/2 cup sweet white grape juice
  • 1 1/2 cups chilled heavy cream
  • 1 cup confectioner's sugar
  • 3 large egg whites
  • 2 large peaches (diced)
  • 2 tsp agar vegan gelatin

Instructions

  1. Preheat oven to 350°F (177°C). Prepare three 8-inch round cake pans by lining them with parchment paper.
  2. In a large bowl, whisk eggs, sugar, and vanilla on high speed until pale and voluminous.
  3. In another bowl, sift together flour, almond flour, and baking powder before gently folding into the egg mixture until just combined.
  4. Divide batter evenly among prepared pans and bake for about 20 minutes or until golden brown. Cool on wire racks.
  5. To make whipped cream frosting, combine chilled heavy cream, confectioner’s sugar, and vanilla in a bowl; whip until stiff peaks form.
  6. For the peach filling, mix peach preserves with sweet white grape juice.
  7. Assemble by layering sponge cake with peach filling and whipped cream; repeat until all layers are used.
  8. Chill for at least one hour before serving.
