  • 2 1/2 cups rolled oats
  • 3/4 cup pumpkin seeds
  • 3/4 cup sunflower seeds
  • 2 tbsp sesame seeds
  • 1 cup buckwheat groats
  • 1/2 cup shredded coconut
  • 1/4 cup dark cocoa powder
  • 1/4 cup coconut oil
  • 1/2 cup maple syrup
  • 1/4 cup honey
  • 1 tsp salt
  • 1/2 cup chocolate chunks or chips
  • 1 1/2 cups freeze-dried raspberries

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, combine rolled oats, pumpkin seeds, sunflower seeds, sesame seeds, buckwheat groats, shredded coconut, and dark cocoa powder.
  3. In a small saucepan over medium heat, melt coconut oil with maple syrup, honey, and salt. Stir until combined and lightly simmering.
  4. Pour the liquid mixture over the dry ingredients and stir until well-coated. Add half of the chocolate chunks and mix again.
  5. Spread the mixture evenly onto the prepared baking sheets and press down firmly into an even layer before topping with remaining chocolate chunks.
  6. Bake for about 35 minutes, rotating trays halfway through.
  7. Allow granola to cool completely before adding freeze-dried raspberries and breaking it into clusters.
