  • 3 carrots (peeled and diced)
  • 2 scallions (chopped)
  • 3 waxy potatoes (diced)
  • ½ cup frozen green peas
  • 4 cups chicken broth (or vegetable broth)
  • 4 tbsp full-fat sour cream (at room temperature)
  • 4 tbsp chopped fresh dill (divided)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried marjoram
  • ¼ tsp ground turmeric
  • ¼ tsp ground nutmeg
  • 1 bay leaf

Instructions

  1. In a large pot over medium-low heat, melt the butter. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Stir in the diced carrots and scallions, cooking for another few minutes.
  3. Add salt, black pepper, marjoram, turmeric, nutmeg, and bay leaf; mix well.
  4. Incorporate the diced potatoes and frozen peas into the pot.
  5. Pour in the chicken broth and bring to a simmer; cover and cook for about 15 minutes until vegetables are tender.
  6. Stir in room temperature sour cream until fully blended for a creamy texture.
  7. Add 3 tablespoons of chopped dill, simmer uncovered for an additional 5 minutes to meld flavors.
