  • 1 1/4 cups cold unsalted butter, cut into small cubes
  • 1/4 cup brown sugar, preferably dark
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted (peeled and chopped) peaches (about 78 peaches/2.5 pounds)
  • 6 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. In a food processor or mixing bowl, combine 2 ½ cups flour, ⅔ cup granulated sugar, and ½ teaspoon salt. Add 1 ¼ cups cold cubed butter and pulse until crumbly.
  3. Reserve 1½ cups of this mixture for topping, then firmly press the remaining crust mixture into the prepared pan. Bake for about 15 minutes until lightly golden.
  4. In a large bowl, toss together 5 cups chopped peaches, 1 cup granulated sugar, ¼ cup flour, ½ teaspoon cinnamon, and ¼ teaspoon salt. Stir in 6 tablespoons heavy cream.
  5. Pour the peach filling over the warm crust and sprinkle reserved crumb topping evenly on top.
  6. Bake for an additional 45 minutes until the topping is golden brown and filling is bubbly. Allow to cool completely before slicing.
