  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ cup sliced almonds
  • 6 oz unsalted butter, cold and cubed
  • 2 medium peaches, peeled and sliced
  • ¾ cup raspberries
  • Juice of ½ lemon
  • 2 teaspoons vanilla extract
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour (for thickening)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, mix together the flour, oats, brown sugar, slice almonds, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, combine sliced peaches and raspberries with lemon juice and flour mixed with granulated sugar.
  5. Press half the crumble mixture into the bottom of the prepared pan as a base.
  6. Spread the fruit mixture evenly over the base layer.
  7. Sprinkle remaining crumble on top and press lightly.
  8. Bake for 40–55 minutes or until golden brown on top.
  9. Allow to cool completely before slicing into bars.
