  • 1½ lb chicken breast (about 34 pieces)
  • 2 Tbsp olive oil (plus extra for potatoes and green beans)
  • 4 garlic cloves, minced (2 for chicken, 2 for potatoes, and 1 for green beans)
  • â…“ cup grated parmesan (plus extra for potatoes)
  • â…“ cup breadcrumbs
  • 2 lb red potatoes, cut into bite-sized pieces
  • 1 lb fresh green beans, trimmed
  • Sea salt and cracked pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a sheet pan with parchment paper.
  2. In a bowl, toss red potatoes with olive oil, minced garlic, grated parmesan, salt, and pepper. Spread on one-third of the sheet pan.
  3. Coat chicken breasts in a mixture of olive oil, minced garlic, parmesan cheese, breadcrumbs, cracked pepper, and sea salt. Place them next to the potatoes.
  4. Toss green beans with olive oil, minced garlic, salt, and pepper before adding them to the remaining space on the sheet pan.
  5. Bake for about 25 minutes or until chicken reaches an internal temperature of 165°F (74°C). For extra crispy potatoes, broil for an additional few minutes if desired.
  6. Let rest for 5-10 minutes before serving.
