  • 1 head cauliflower
  • 1 cup cherry tomatoes
  • 1/2 medium red onion
  • 1/4 cup black olives
  • 1/4 cup green olives
  • 1/4 cup fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons apple vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Remove leaves from the cauliflower and cut into bite-sized florets.
  2. Blanch the florets in boiling salted water for 2 minutes, then transfer to an ice bath to halt cooking.
  3. While cooling, prepare the other ingredients: halve cherry tomatoes, finely slice red onion, and pit and slice olives.
  4. In a mixing bowl, combine olive oil, apple vinegar, Dijon mustard, minced garlic, oregano, basil, salt, and pepper; whisk until emulsified.
  5. Drain and pat dry the cauliflower florets before adding them to the dressing along with cherry tomatoes, red onion, olives, and parsley. Toss gently until well coated.
  6. Cover the bowl and refrigerate for at least 30 minutes for flavors to meld.
