  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 3 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup kalamata olives, pitted and sliced
  • Tzatziki sauce (store-bought or homemade)

Instructions

  1. In a large mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and pepper.
  2. Add sliced chicken to the marinade; mix well and refrigerate for at least 30 minutes.
  3. Heat a non-stick skillet over medium-high heat. Cook marinated chicken for 6–8 minutes until golden brown.
  4. Warm tortillas in a dry skillet or microwave until pliable.
  5. Assemble tacos by layering chicken on each tortilla and topping with feta cheese, tomatoes, cucumber, red onion, parsley, and olives.
  6. Drizzle with tzatziki sauce before serving.
