  • 1 bunch asparagus
  • 3 cloves garlic
  • 1/4 cup lemon juice
  • 16 oz orzo pasta
  • 1/4 tsp ground black pepper
  • 2 tsp kosher salt
  • 1/4 cup extra-virgin olive oil
  • 4 oz feta cheese

Instructions

  1. Boil salted water in a large pot. Add orzo and cook until al dente (about 8-10 minutes). Drain and set aside.
  2. Blanch asparagus in boiling salted water for 2 minutes, then transfer to an ice bath before slicing.
  3. Sauté minced garlic in olive oil until golden.
  4. In a large mixing bowl, combine cooked orzo, asparagus, arugula, lemon juice, sautéed garlic mixture, and crumbled feta. Toss to combine.
