  • 2 medium carrots, peeled and chopped finely
  • 1/2 medium onion, chopped
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 6 cups chicken broth
  • 1/4 teaspoon Italian seasoning
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo pasta
  • 1 tablespoon lemon juice (or to taste)
  • 1 tablespoon chopped fresh parsley (or to taste)
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot, heat butter and olive oil over medium-high heat. Sauté celery, carrots, and onion until tender (about 5–7 minutes).
  2. Stir in minced garlic and flour; cook for another 30 seconds until fragrant.
  3. Pour in chicken broth and add Italian seasoning along with raw chicken breasts. Bring to a boil then reduce heat slightly, covering the pot while leaving the lid ajar.
  4. Simmer for about 15 minutes until chicken reaches an internal temperature of 165°F (74°C).
  5. Remove chicken from the pot; shred or chop into bite-sized pieces.
  6. Add uncooked orzo to the pot; stir and cook for about 10 minutes until al dente.
  7. Return shredded chicken to the pot along with its juices; stir in lemon juice and parsley.
  8. Season with salt and pepper to taste before serving.
