  • 200g store-bought hummus
  • 2 ripe avocados
  • 250g mini Roma tomatoes, finely diced
  • 150g mini cucumbers, finely diced
  • 100g crumbled feta cheese (or vegan feta)
  • 250g light sour cream
  • 1 tbsp lemon juice
  • 1/2 small red onion, finely chopped
  • 2 tbsp toasted pine nuts
  • 3/4 cup fresh parsley leaves, finely chopped

Instructions

  1. In a glass dish, evenly spread the hummus as the base layer.
  2. Mash the ripe avocados with lemon juice until smooth yet slightly textured; layer this over the hummus.
  3. Sprinkle half of the diced tomatoes, cucumbers, red onion, and crumbled feta on top of the avocado layer.
  4. Spread dollops of light sour cream over the veggies.
  5. Repeat by layering the remaining vegetables and feta on top of the sour cream.
  6. Finish with toasted pine nuts and fresh parsley for garnish.
  7. Chill in the refrigerator for at least 30 minutes before serving.
