  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons fresh lavender (or 1 tablespoon dried lavender)
  • 3 tablespoons sugar + more for sprinkling
  • 4 egg yolks

Instructions

  1. Infuse the cream: In a medium saucepan, heat the heavy whipping cream until hot but not boiling. Remove from heat, then add vanilla extract and lavender flowers. Let it sit for 30 minutes.
  2. Preheat your oven to 300°F (150°C).
  3. Whisk together egg yolks and sugar in a separate bowl until pale yellow.
  4. Strain the infused cream into the egg-sugar mixture, whisking continuously until smooth.
  5. Pour the custard into ramekins, then place them in a high-sided baking pan filled with hot water halfway up their sides.
  6. Bake for 50-60 minutes until slightly wobbly in the center.
  7. Chill in the refrigerator for at least two hours before serving.
  8. Just before serving, sprinkle sugar on top and caramelize it with a blowtorch or under the broiler.
