2 tsp fresh ginger (finely grated)
2 tsp minced garlic
3 tbsp low sodium soy sauce
3 tbsp brown sugar
1 tsp sesame oil
1 tbsp rice vinegar
2 tbsp gochujang (Korean chili paste)
Chopped green onions (for garnish)
Instructions
Cut chicken thighs into bite-sized cubes (about 1 1/2 inches).
In a mixing bowl, combine ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang; whisk until smooth.
Pour half the marinade over the chicken cubes and mix well. Cover and refrigerate for at least 4 hours or overnight.
Preheat the grill to medium-high heat.
Thread marinated chicken onto skewers, leaving space between pieces.
Grill skewers for about 20-30 minutes, turning every 3-4 minutes until cooked through (internal temperature reaches 165°F). Baste with reserved marinade during the last few minutes of cooking.
