  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang (Korean chili paste)
  • Chopped green onions (for garnish)

Instructions

  1. Cut chicken thighs into bite-sized cubes (about 1 1/2 inches).
  2. In a mixing bowl, combine ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang; whisk until smooth.
  3. Pour half the marinade over the chicken cubes and mix well. Cover and refrigerate for at least 4 hours or overnight.
  4. Preheat the grill to medium-high heat.
  5. Thread marinated chicken onto skewers, leaving space between pieces.
  6. Grill skewers for about 20-30 minutes, turning every 3-4 minutes until cooked through (internal temperature reaches 165°F). Baste with reserved marinade during the last few minutes of cooking.
  7. Let skewers rest for 5-10 minutes before serving.
