  • 2 cups broccoli slaw
  • 1 cup purple cabbage, finely sliced
  • 3/4 cup walnuts, chopped
  • 3/4 cup dried cranberries
  • 3.5 tablespoons apple cider vinegar
  • 1.5 teaspoons grated orange zest
  • 3 tablespoons fresh squeezed orange juice
  • 2.5 teaspoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 1/3 cup extra virgin olive oil
  • 1/4 cup mayonnaise
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together apple cider vinegar, orange zest, orange juice, Dijon mustard, maple syrup, and mayonnaise until smooth.
  2. In a large mixing bowl, combine chopped kale, broccoli slaw, and purple cabbage. Toss gently.
  3. Add chopped walnuts and dried cranberries to the vegetable mixture and toss again.
  4. Pour half of the dressing over the salad and toss to coat evenly.
  5. Cover the salad and chill in the refrigerator for at least 30 minutes.
  6. Before serving, give it one last gentle toss and add more dressing if desired.
