  • 6 medium Russet potatoes
  • Olive oil
  • Salt and pepper
  • 8 ounces cream cheese, softened
  • 1/2 cup grated cheddar cheese
  • 1/4 cup sour cream
  • 1 large jalapeno, seeded and minced

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the Russet potatoes clean and pierce them with a fork. Drizzle with olive oil and sprinkle with salt and pepper.
  2. Roast the potatoes directly on a baking sheet for about 60 minutes or until tender.
