  • Salt and freshly ground black pepper to taste
  • A pinch of sugar (optional)
  • 1 cup whole milk ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg yolk
  • 2 tablespoons fresh parsley, finely chopped
  • 1 clove garlic, minced
  • 46 ounces beef turkey pepperoni, thinly sliced
  • 8 ounces low-moisture mozzarella cheese, freshly grated
  • ¼ cup freshly grated Pecorino Romano cheese (optional)
  • Fresh basil leaves for garnish
  • ½ cup honey
  • 12 tablespoons hot sauce
  • Pinch of red pepper flakes (optional)

Instructions

  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit until foamy (5-10 minutes).
  2. Add olive oil, salt, and gradually mix in flour until a shaggy dough forms. Knead for about 10 minutes until smooth.
  3. Place the dough in an oiled bowl, cover, and let rise in a warm place until doubled (about 1 hour).
  4. For the sauce, heat olive oil in a saucepan and sauté minced garlic. Add crushed tomatoes, oregano, salt, and pepper; simmer for 20-30 minutes.
  5. Preheat your oven to its highest setting (500°F -550°F). Prepare your pizza stone or steel.
  6. Roll out the dough on a floured surface into a circle about 12-14 inches wide.
  7. Spread tomato sauce over the crust leaving a border. Top with mozzarella, beef turkey pepperoni, and dollops of ricotta.
  8. Bake for about 8-12 minutes until golden brown and bubbly.
  9. Drizzle with hot honey and garnish with fresh basil before serving.
