  • 1000 grams chuck or braising steak, cut into chunks
  • 1 cup chopped onions
  • 2 cloves garlic, chopped
  • 2 cm fresh ginger, chopped
  • 0.5 teaspoon ground turmeric
  • 2 teaspoons ground coriander
  • 1 teaspoon garam masala
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon red chili powder (adjust to taste)
  • 1 cup beef broth
  • 0.5 cup water
  • 3 cm cinnamon stick
  • 1 piece dried bay leaf
  • Salt to taste
  • 2 tablespoons chopped cilantro (plus more for garnish)

Instructions

  1. Heat oil or ghee in a large pan over medium-high heat.
  2. Sear the beef chunks until browned on all sides (about 3–4 minutes per side). Transfer to a slow cooker.
  3. In the same pan, sauté onions until translucent (about 5–7 minutes). Add garlic and ginger; cook until fragrant (1–2 minutes).
  4. Add turmeric, coriander, garam masala, cumin, and red chili powder to the onion mixture; stir constantly for about a minute.
  5. Pour this mixture over the beef in the slow cooker; add broth and water.
  6. Add cinnamon stick and bay leaf; stir gently to combine.
  7. Cover and cook on low for about 8 hours or on high for about 4 hours.
  8. Taste before serving; adjust seasoning as needed.
  9. Garnish with fresh cilantro before serving with rice or naan.
