1 egg white (or aquafaba)
¾ oz fresh lemon juice
½ oz maple syrup
1.5 oz grilled peach puree
1 tbsp unsalted butter
2 tbsp brown sugar
Dash of cinnamon
2 peach halves (for grilling)
Instructions
Preheat your grill or grill pan over medium-high heat.
Grill the halved peaches for about 4-5 minutes until charred. Flip, sprinkle with brown sugar and lemon juice, and grill for another minute. Let cool before pureeing.
In a shaker, combine egg white (or aquafaba), lemon juice, maple syrup, and peach puree. Dry shake for 15 seconds to emulsify.
Add ice to the shaker and shake again for 20-25 seconds until chilled.
Double strain into a glass filled with ice. Garnish with a slice of grilled peach or thyme sprig.
