  • 1 lb chicken breast (cut into 1-inch chunks)
  • 2.5 tbsp olive oil
  • 2.5 tbsp lemon juice
  • 2 garlic cloves (minced)
  • 2 tsp oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1.25 cups cucumbers (diced)
  • 1 cup tomatoes (diced)
  • 1 cup bell pepper (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tbsp parsley (chopped)
  • 3/4 cup feta cheese (crumbled)
  • 8 pitas
  • 1/2 cup tzatziki sauce

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes. Add the chicken chunks and toss to coat evenly. Allow to marinate for at least 30 minutes.
  2. While the chicken marinates, prepare the vegetable toppings by dicing cucumbers, tomatoes, bell peppers, and red onion. Toss them in a bowl with parsley and an additional squeeze of lemon juice.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for about 5-7 minutes on each side until fully cooked (165°F internal temperature). Let rest for five minutes.
  4. Warm the pitas briefly on the grill or stovetop until soft. Assemble tacos by placing grilled chicken in each pita pocket and topping with the vegetable medley and tzatziki sauce.
