  • 34 tablespoons olive oil
  • 2 cups yellow onions (thinly sliced)
  • 10 cloves garlic (pressed or minced)
  • 1 teaspoon ground turmeric
  • 1 teaspoon seven spice (or cumin)
  • ½ teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 8 cups low sodium chicken stock
  • 1 ¼ cup red lentils (rinsed)
  • 1 ½ cups chopped fresh herbs (spinach, parsley, cilantro, dill, mint)
  • Lemon wedges (for finishing)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced onions and cook until caramelized and golden brown, about 16–20 minutes.
  2. Add garlic and sauté for another minute until fragrant. Stir in turmeric, seven spice, coriander, cayenne, salt, and black pepper.
  3. Pour in chicken stock and bring to a boil. Add chicken pieces and reduce heat to simmer for about 18–20 minutes until cooked through.
  4. Remove chicken to shred it using two forks and return it to the pot.
  5. Stir in rinsed lentils and simmer for an additional 15–20 minutes until tender. Mix in fresh herbs before serving.
  6. Serve with lemon wedges and crusty bread.
