  • 1 baguette
  • 4 Roma tomatoes
  • ½ seedless English cucumber
  • 1 ½ cups freshly crumbled feta
  • ½ cup chopped green onion
  • 1 lemon (zest and juice)
  • ¼ cup extra virgin olive oil
  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp dried oregano leaves
  • ⅛ tsp dried dill
  • ½ tsp dried basil (or 1 TBSP fresh basil)

Instructions

  1. Preheat the oven to 400°F (200°C) and slice the baguette diagonally into half-inch thick pieces.
  2. Arrange the slices on a baking sheet and toast for about 8–10 minutes until golden brown.
  3. Dice the Roma tomatoes and cucumber; thinly slice the green onions.
  4. In a mixing bowl, combine diced tomatoes, cucumber, green onion, crumbled feta, lemon zest and juice.
  5. Drizzle with olive oil and apple cider vinegar; season with garlic powder, salt, pepper, oregano, dill, and basil.
  6. Gently mix until well combined; let sit for at least 30 minutes to allow flavors to marry.
  7. Top toasted baguette slices with the vegetable mixture just before serving.
