  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • A dash of salt (for frosting)
  • 1 Tbsp lemon zest (for frosting)
  • 2 Tbsp fresh lemon juice (for frosting)
  • 1 Tbsp milk (if needed)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in fresh lemon juice and zest.
  4. In a separate bowl, combine flour, baking powder, and salt. Gradually add dry ingredients to wet mixture until just combined.
  5. Roll dough into tablespoon-sized balls and place on lined baking sheets. Flatten each ball gently with a glass dipped in sugar.
  6. Bake for 9–10 minutes or until lightly golden around the edges; they should remain soft in the center.
  7. Allow cookies to cool on the pan for a few minutes before transferring to a cooling rack.
  8. For the frosting: In a mixing bowl, combine softened butter and powdered sugar until smooth. Add dash of salt, lemon juice, and lemon zest; mix well until creamy. Adjust consistency with milk as needed.
  9. Once cookies are completely cooled, frost generously with lemon icing.
