  • 1 (10-ounce) jar stuffed green olives
  • 2 cups Panko bread crumbs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika or chili powder
  • 2–3 large eggs
  • Cooking spray (olive oil or canola)
  • Fresh oregano leaves and grated Parmesan cheese for garnishing

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Prepare three mixing bowls: whisk eggs in one bowl, combine flour, garlic powder, and paprika/chili powder in another bowl, and place Panko breadcrumbs in the last.
  3. Drain olives well and coat each in the flour mixture, then dip into the egg wash, and finally coat with Panko.
  4. Spray the coated olives lightly with cooking spray and arrange them in a single layer in the air fryer basket.
  5. Air fry for 5 minutes, flip the olives using tongs, spritz again with cooking spray, and cook for an additional 3 minutes until golden brown.
  6. Garnish with fresh oregano and grated Parmesan before serving.
