  • 2 cups powdered sugar, sifted
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 Tbsp heavy cream
  • 1/4 tsp red food coloring
  • 1/4 tsp blue food coloring
  • 125g almond flour, finely ground
  • 100g egg whites, room temperature
  • 100g granulated sugar

Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper or silicone mats.
  2. In a mixing bowl, whip room temperature egg whites until soft peaks form. Gradually add granulated sugar, continuing to whip until stiff peaks form.
  3. In a separate bowl, sift together almond flour and powdered sugar. Gently fold this mixture into the meringue without deflating it.
  4. Divide the batter into three bowls and color two portions red and blue while keeping one white.
  5. Pipe rounds onto the prepared sheets, spacing them apart. Let them rest for about 30-60 minutes until a skin forms on top.
  6. Bake for 15-20 minutes until puffed and feet have formed, then cool completely on racks.
  7. Prepare the buttercream filling by mixing softened butter with sifted powdered sugar, vanilla extract, and cream until fluffy. Divide and color accordingly.
  8. Fill half of the macaron shells with buttercream and gently sandwich them together.
