  • 3 large sweet potatoes (peeled and cut into 1/2-inch slices)
  • 1 lb chicken or turkey sausage (removed from casings)
  • 2 medium apples (cored and sliced)
  • 1 cup pecans (roughly chopped)
  • 2 teaspoons cinnamon
  • 2 tablespoons olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Parboil sweet potato slices in boiling water for about 8 minutes until tender but firm; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and brown the sausage for about 8 minutes. Remove from heat.
  4. Toss apple slices with cinnamon, salt, and pepper.
  5. Layer half of the sweet potato slices in the baking dish, followed by half of the sausage mixture, then half of the apples and pecans. Repeat layers.
  6. Top with cheddar cheese and remaining pecans.
  7. Cover loosely with foil and bake for 30-35 minutes until bubbling and golden.
