  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 28 oz can fire roasted tomatoes
  • 1 1/2 cups vegetable broth
  • 1/4 tsp salt
  • 1 tbsp brown sugar
  • 1/4 tsp red pepper flakes
  • 1 cup full-fat coconut milk (or 1/2 cup heavy cream)
  • 16 oz package fresh or frozen gnocchi
  • 1 cup fresh basil (+ more for topping if desired)

Instructions

  1. In a large pot over medium heat, warm the olive oil and sauté the diced onion until translucent. Add minced garlic and cook until fragrant.
  2. Stir in fire-roasted tomatoes, vegetable broth, salt, brown sugar, and red pepper flakes. Bring to a boil, then reduce heat and simmer for about 10 minutes.
  3. Blend the mixture using an immersion blender until desired consistency is reached.
  4. Stir in coconut milk (or heavy cream) and add the gnocchi. Cook for 3–4 minutes until gnocchi float to the top.
  5. Remove from heat and mix in torn basil leaves before serving.
