  • 6 tablespoons mayonnaise
  • ½ teaspoon garlic powder
  • 1 cup crumbled cotija cheese (or feta as a substitute)
  • ⅓ cup fresh cilantro, roughly chopped
  • 1 teaspoon chipotle chili powder
  • Juice of 2 limes (quartered)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Roast corn in husks on the oven rack for 35-40 minutes until tender.
  3. In a bowl, mix mayonnaise and garlic powder until smooth.
  4. Brush garlic mayo over hot corn.
  5. Roll each ear in crumbled cotija cheese until evenly coated.
  6. Sprinkle with chopped cilantro and chipotle chili powder.
  7. Serve with lime wedges for squeezing over the top.
