  • 16-ounce bag tri-color coleslaw mix
  • 1 diced red bell pepper
  • 1½ cups halved grape tomatoes
  • 1 (15.25 ounce) can drained and rinsed black beans
  • 1½ cups grilled or blackened corn
  • 1 jalapeno seeded and minced
  • ½ cup chopped fresh cilantro
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. In a small mixing bowl, whisk together the mayonnaise, sour cream, lime juice, and taco seasoning until smooth.
  2. In a large mixing bowl, combine the tri-color coleslaw mix, diced bell pepper, grape tomatoes, black beans, corn, jalapeno, and cilantro.
  3. Gently fold in the creamy dressing until all ingredients are evenly coated.
  4. Season with salt and pepper to taste. Mix gently one last time.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
