  • 1 tablespoon olive oil
  • 20 g unsalted butter
  • 450 g chicken breast, diced
  • 1 medium onion, diced
  • 1 red pepper, sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons mild or medium curry powder
  • 200 ml chicken stock
  • 2 kaffir lime leaves
  • 400 ml full-fat coconut milk
  • 1 large mango, diced (about 250 g)
  • Fresh coriander leaves for garnish

Instructions

  1. In a large deep pan over medium heat, heat the olive oil until shimmering. Add the butter and let it melt.
  2. Add the diced chicken and cook until golden brown (about 4–5 minutes).
  3. Stir in the diced onions and red peppers; sauté until softened (about 2–3 minutes).
  4. Add minced garlic and grated ginger; stir for about one minute until fragrant.
  5. Mix in the curry powder and cook briefly to release its aroma.
  6. Pour in the chicken stock and add kaffir lime leaves; bring to a gentle simmer.
  7. Stir in coconut milk and diced mango; let simmer for about 10 minutes until thickened.
  8. Remove from heat, let sit for a couple of minutes before serving. Garnish with fresh coriander.
