  • 3 cloves garlic (minced)
  • 1/4 cup diced onion
  • 1 large carrot (34 oz)
  • 2 tbsp tomato paste
  • 1/4 cup tomato sauce (optional)
  • 1 1/4 cups lentils (brown or green)
  • 12 oz potatoes (cut into bite-sized pieces)
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp thyme
  • 1/2 tsp oregano
  • 45 cups water or vegetable stock

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté onions for one minute, then add garlic and carrots; cook until fragrant.
  2. Stir in tomato paste and optional tomato sauce; cook for one minute.
  3. Add lentils, followed by potatoes. Pour in hot vegetable stock or water and season with salt, black pepper, thyme, and oregano.
  4. Bring to a boil, then reduce heat to medium-low and cover. Simmer for 25 to 35 minutes until lentils and potatoes are tender.
