Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth (or vegetable broth)
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 red onion, chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and oregano before searing until golden brown on both sides (5–7 minutes per side). Remove from pan and set aside.
  2. In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add cherry tomatoes and zucchini; cook for about 5 minutes.
  3. Stir in diced bell pepper and chopped red onion; sauté until softened.
  4. Add orzo pasta and chicken broth; bring to a boil then reduce heat to simmer for about 10–12 minutes until orzo is tender.
  5. Return seared chicken to the skillet and drizzle balsamic vinegar over everything; cook for another 2–3 minutes to meld flavors.
  6. Garnish with fresh basil before serving.
