  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine halved baby potatoes with olive oil, minced garlic, salt, and pepper. Toss until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet in a single layer.
